Who's Afraid of Frozen Fish?

Who is afraid of frozen fish? Well, if you are, take note!

Frozen fish can be a delicious, convenient and affordable way to work high-quality protein into the daily diet. I have a freezer full of frozen fish and I rely on it often for quick dinners of all sorts. I snapped this photo years ago while developing and testing sockeye recipes. These Alaska sockeye fillets, which look ridiculously fresh, were purchased in the frozen food section of Costco. Defrosted, skinned and stripped, they cooked beautifully in a cast-iron pan and ultimately found their way into a taco recipe for Bristol Bay Sockeye.

 So, if you struggle to work more seafood into your diet, save yourself the hassle of heading to the seafood counter at the end of busy day and stock your freezer with some high-quality individually wrapped frozen fillets!  Because the fillets are individually wrapped, you can pull out only what you need for dinner that night. And,  rest assured that those fillets, which usually average about six ounces, will defrost quickly and beautifully. Just like fresh!
